Purpose-built spaces designed for flavour development, precision roasting, and absolute consistency. These will be centres of excellence where we can push the boundaries of hot air roasting.

Hot air roasting: The foundation of our flavour

From the beginning, flavour has been our legacy. When Allpress started in 1989, we chose a different path — one that would define our taste for decades.

In 2003, we began hot air roasting, using convective heat to suspend beans in a fluidised stream of clean hot air to produce our signature sweeter, cleaner flavour.

To take hot air roasting to the next level, we’re partnering with IMF Roasting, Italian specialists in state-of-the-art hot air technology. Their systems are engineered to deliver on our core values:

  • Flavour consistency at scale – Precision temperature control locks in the nuances that define our profile.

  • Sustainability & efficiency – A single-burner system recirculates hot, clean air, cutting emissions and energy use vs. our current two-burner roasters

  • Cleaner roasting – Continuous chaff extraction prevents unwanted burning and safeguards flavour.

  • Built-in quality assurance – Integrated destoners ensure only the highest-quality beans make it in the bag.

Our Global Head Roaster, Cam MacFadyen, recently tested our profiles on an IMF 60kg roaster in Sydney:

Same team, same people, new digs

After 20+ years roasting on Epsom Rd in Zetland, and 12 years roasting in Collingwood, we’ll be decommissioning both roasters and moving all roasting to Reservoir.

Both sites will continue as the support hubs of our teams though! Home to all things technical, training, customer service and support, they’re still the spiritual homes of everything Allpress.

What’s happening?

In late 2025, we're opening our brand new roastery, consolidating all Australian coffee production into a single, state-of-the-art facility in Reservoir, Victoria. This new site features a 240kg & 120kg IMF Hot Air Roaster, an advanced QC facility, an automatic packing line, and other state-of-the-art roasting capabilities.

Why are you making this change?

We’ve been roasting for thirty years, and our roasters are beginning to show their wear. They’re not as reliable as they once were, and we’re looking to future-proof our roasting capability so we can continue to deliver on our flavour promise.

Will my coffee taste the same?

Absolutely. Our Global Head of Coffee, Cam McFadyen, and Regional Heads of Coffee have conducted extensive testing to deliver our iconic flavour. The new roasters have been precisely calibrated to match our current coffee profiles.

What is the new roaster?

Our new facility will house two new IMF roasters: a 240KG and a 120KG. IMF are known globally for their hot-air roasting technology and for building highly efficient roasting systems for specialty and industrial roasters.

Are the same people still roasting my coffee?

Yep! The same Allpress team you know is still behind the roasters, now with upgraded equipment to do their job even better.

What’s happening to the Zetland and Collingwood roasteries?

Both sites will remain a key part of Allpress, but they will no longer house our roasting equipment. Both Zetland and Collingwood will continue as cafés and our homes to our customer teams, including our trainers, technicians and customer service. The spaces will keep serving exceptional coffee and remain places where our community can connect with our brand.

Will I still have local support?

While roasting operations are consolidating, our people on the ground in Sydney, Brisbane and Byron Bay are still here supporting local partners:

  • Technical support teams stay in their current regions

  • Training services remain locally available

  • Customer support continues to operate from existing locations

Where will my orders be shipped from now?

All wholesale orders will be roasted and shipped from our new Melbourne roastery. This centralised hub gives us greater roasting capacity and efficiency while keeping quality and consistency exactly the same.
